Turkey Stuffed Peppers

Colorful bell peppers stuffed with seasoned ground turkey, black beans, mushrooms, and melted cheddar cheese.

Ingredients

  • 2 tsp Mexican in a Minute
  • 4 bell peppers, halved and seeded
  • 1 lb ground turkey
  • 4-5 brown mushrooms, diced
  • ½ yellow onion, chopped
  • 1 can black beans, drained and rinsed
  • 1 can green chiles
  • ½ cup cheddar cheese, cubed

Directions

  1. Preheat oven to 375 degrees.
  2. Heat olive oil in a large saute pan over medium-high heat. Saute onion and mushrooms until softened.
  3. Add ground turkey and Mexican in a Minute, cook until browned, breaking into small pieces.
  4. Stir in black beans and green chiles.
  5. Arrange pepper halves cut-side up in a baking dish. Fill each with the turkey mixture and top with cheddar cheese.
  6. Bake uncovered for 20-25 minutes until peppers are tender and cheese is melted.
