Turkey Stuffed Peppers
Colorful bell peppers stuffed with seasoned ground turkey, black beans, mushrooms, and melted cheddar cheese.
Ingredients
- 2 tsp Mexican in a Minute
- 4 bell peppers, halved and seeded
- 1 lb ground turkey
- 4-5 brown mushrooms, diced
- ½ yellow onion, chopped
- 1 can black beans, drained and rinsed
- 1 can green chiles
- ½ cup cheddar cheese, cubed
Directions
- Preheat oven to 375 degrees.
- Heat olive oil in a large saute pan over medium-high heat. Saute onion and mushrooms until softened.
- Add ground turkey and Mexican in a Minute, cook until browned, breaking into small pieces.
- Stir in black beans and green chiles.
- Arrange pepper halves cut-side up in a baking dish. Fill each with the turkey mixture and top with cheddar cheese.
- Bake uncovered for 20-25 minutes until peppers are tender and cheese is melted.
