Texas Caviar aka Black Eyed Peas

A fresh, zesty Texas Caviar with black-eyed peas, peppers, and cilantro seasoned with Mexican in a Minute.

Ingredients

  • 2½ tsp Mexican in a Minute
  • 8 oz dried black-eyed peas (or 1 16-oz can)
  • 2 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • ¼ cup red onion, diced small
  • ¼ cup green peppers, diced small
  • ¼ cup cilantro, chopped
  • 1 jalapeno, seeded and diced (optional)

Directions

  1. Sort dried peas and remove any debris. Add to a saucepan with 4½ cups cold water and 2 tsp Mexican in a Minute.
  2. Bring to a boil, then cover and simmer 35-45 minutes until tender. Drain and cool.
  3. Toss cooled peas with olive oil, red wine vinegar, onion, green peppers, cilantro, jalapeno, and remaining ½ tsp Mexican in a Minute.
  4. Mix well and serve at room temperature or chilled.

Tips

  • If using canned peas, drain and rinse well, then use only 1 tsp of the blend total.
