Sweet Potato Skins with Smokin' Chipotle

Loaded sweet potato skins with chipotle-seasoned chicken, spinach, and sharp white cheddar — smoky, hearty, and crowd-ready.

Ingredients

  • 3 tsp Smokin' Chipotle
  • 4 large sweet potatoes
  • 2 boneless skinless chicken breasts
  • 3 Tbsp olive oil
  • 2 Tbsp fresh lime juice
  • 2 cups spinach
  • 2 cups sharp white cheddar cheese, grated
  • 1 Tbsp cilantro, chopped (for garnish)
  • Greek yogurt for serving

Directions

  1. Preheat oven to 350 degrees.
  2. Rub chicken with olive oil and ½ tsp Smokin' Chipotle per breast. Set aside to marinate.
  3. Wash sweet potatoes, poke with a fork, and place on a foil-lined baking sheet.
  4. Bake chicken and potatoes together. Remove chicken after 20 minutes; continue baking potatoes another 30 minutes until soft.
  5. Halve the potatoes, scoop out most of the flesh, and fill skins with shredded chicken, spinach, and cheese.
  6. Mix lime juice, olive oil, and ½ tsp Smokin' Chipotle as a drizzle.
  7. Bake filled skins until cheese melts. Garnish with cilantro and serve with Greek yogurt.
