Sweet Potato Skins with Smokin' Chipotle
Loaded sweet potato skins with chipotle-seasoned chicken, spinach, and sharp white cheddar — smoky, hearty, and crowd-ready.
Ingredients
- 3 tsp Smokin' Chipotle
- 4 large sweet potatoes
- 2 boneless skinless chicken breasts
- 3 Tbsp olive oil
- 2 Tbsp fresh lime juice
- 2 cups spinach
- 2 cups sharp white cheddar cheese, grated
- 1 Tbsp cilantro, chopped (for garnish)
- Greek yogurt for serving
Directions
- Preheat oven to 350 degrees.
- Rub chicken with olive oil and ½ tsp Smokin' Chipotle per breast. Set aside to marinate.
- Wash sweet potatoes, poke with a fork, and place on a foil-lined baking sheet.
- Bake chicken and potatoes together. Remove chicken after 20 minutes; continue baking potatoes another 30 minutes until soft.
- Halve the potatoes, scoop out most of the flesh, and fill skins with shredded chicken, spinach, and cheese.
- Mix lime juice, olive oil, and ½ tsp Smokin' Chipotle as a drizzle.
- Bake filled skins until cheese melts. Garnish with cilantro and serve with Greek yogurt.
