Stuffed Hatched Peppers
Seasonal Hatch chile peppers stuffed with smoky chipotle-seasoned ground turkey, Cotija cheese, and fresh cilantro.
Ingredients
- 4½ tsp Smokin' Chipotle
- 1 lb ground turkey
- 5-6 Hatch chile peppers
- 1½ cups Cotija cheese, diced
- ½ cup cilantro, chopped
- 1 lime, juiced
- 2 Tbsp olive oil
- 1 small onion, diced ⅛"
Directions
- Preheat oven to 375 degrees.
- Heat olive oil in a saute pan over medium-high heat with 1½ tsp Smokin' Chipotle. Saute diced onion until translucent, 5-7 minutes.
- Add ground turkey and remaining 3 tsp Smokin' Chipotle. Brown the meat, breaking into small chunks.
- Halve the Hatch peppers and remove seeds. Fill each half with the turkey mixture.
- Top with Cotija cheese and bake until peppers are tender and cheese is melted, about 20 minutes.
- Garnish with cilantro and a squeeze of lime juice.
Tips
- Hatch peppers are typically available August through September.
