Stuffed Hatched Peppers

Seasonal Hatch chile peppers stuffed with smoky chipotle-seasoned ground turkey, Cotija cheese, and fresh cilantro.

Ingredients

  • 4½ tsp Smokin' Chipotle
  • 1 lb ground turkey
  • 5-6 Hatch chile peppers
  • 1½ cups Cotija cheese, diced
  • ½ cup cilantro, chopped
  • 1 lime, juiced
  • 2 Tbsp olive oil
  • 1 small onion, diced ⅛"

Directions

  1. Preheat oven to 375 degrees.
  2. Heat olive oil in a saute pan over medium-high heat with 1½ tsp Smokin' Chipotle. Saute diced onion until translucent, 5-7 minutes.
  3. Add ground turkey and remaining 3 tsp Smokin' Chipotle. Brown the meat, breaking into small chunks.
  4. Halve the Hatch peppers and remove seeds. Fill each half with the turkey mixture.
  5. Top with Cotija cheese and bake until peppers are tender and cheese is melted, about 20 minutes.
  6. Garnish with cilantro and a squeeze of lime juice.

Tips

  • Hatch peppers are typically available August through September.
