Spinach and Artichoke Dip with French Made Easy

A rich, creamy spinach and artichoke dip with French herbs — fantastic hot or cold, and versatile enough to top chicken or baked potatoes.

Ingredients

  • 1.5 Tbsp French Made Easy
  • 1 bag frozen artichoke hearts
  • 2 bags frozen organic spinach
  • ½ cup freshly grated Parmigiano Reggiano
  • 1 (7.5 oz) container creme fraiche
  • 1 cup mascarpone cheese
  • Juice from 1 lemon
  • 1 clove garlic, mashed

Directions

  1. Cook frozen spinach in a pot over medium heat until thawed and warmed through.
  2. In a separate pan, brown frozen artichoke hearts over medium heat. Cool, then chop into ½" pieces.
  3. Chop garlic and juice the lemon.
  4. Combine all ingredients in a large bowl and mix until evenly blended.
  5. Add French Made Easy and stir well. Serve as-is, or top with mozzarella and bake at 350 degrees for 20 minutes.

Tips

  • Try it as a topping for baked chicken or mixed into scrambled eggs.
