Smokin' Chipotle Cornbread

A smoky twist on classic American cornbread — golden, tender, and ready in under 45 minutes.

Ingredients

  • 2 tsp Smokin' Chipotle
  • 2 eggs, lightly beaten
  • 1 cup cornmeal
  • ¾ cup flour (or gluten-free flour)
  • 1½ tsp baking powder
  • 1 cup buttermilk
  • ½ tsp baking soda
  • 1 Tbsp sugar (or coconut sugar)
  • 6 Tbsp butter, melted

Directions

  1. Preheat oven to 425 degrees.
  2. Mix all dry ingredients (cornmeal, flour, baking powder, baking soda, sugar, and Smokin' Chipotle) in one bowl.
  3. Whisk buttermilk, eggs, and melted butter in a second bowl.
  4. Pour wet mixture into dry ingredients and fold gently until smooth with no dry clumps.
  5. Pour batter into a parchment-lined, buttered 8" baking pan. Tap gently to remove air bubbles.
  6. Bake 20-25 minutes until golden brown. Test with a toothpick — it should come out clean.

Tips

  • Use gluten-free flour for a GF version.
