Smokin' Chipotle Cornbread
A smoky twist on classic American cornbread — golden, tender, and ready in under 45 minutes.
Ingredients
- 2 tsp Smokin' Chipotle
- 2 eggs, lightly beaten
- 1 cup cornmeal
- ¾ cup flour (or gluten-free flour)
- 1½ tsp baking powder
- 1 cup buttermilk
- ½ tsp baking soda
- 1 Tbsp sugar (or coconut sugar)
- 6 Tbsp butter, melted
Directions
- Preheat oven to 425 degrees.
- Mix all dry ingredients (cornmeal, flour, baking powder, baking soda, sugar, and Smokin' Chipotle) in one bowl.
- Whisk buttermilk, eggs, and melted butter in a second bowl.
- Pour wet mixture into dry ingredients and fold gently until smooth with no dry clumps.
- Pour batter into a parchment-lined, buttered 8" baking pan. Tap gently to remove air bubbles.
- Bake 20-25 minutes until golden brown. Test with a toothpick — it should come out clean.
Tips
- Use gluten-free flour for a GF version.
