Smokin' Chipotle Chicken Salad
A hearty Southwest-style chicken salad with black beans, roasted corn, and a smoky chipotle kick.
Ingredients
- 3-4 tsp Smokin' Chipotle
- 2 chicken breasts, butterflied
- 1 can black beans, drained
- 2 tomatoes, deseeded and diced ¼"
- ½ cup cilantro, chopped
- 1 yellow bell pepper, diced ¼"
- 1 cup roasted corn
- 1 large jalapeno, deseeded and diced small
- 1 lime, juiced
- 3-4 Tbsp olive oil
Directions
- Simmer black beans with 1 tsp Smokin' Chipotle for 10 minutes, then drain and transfer to a large bowl.
- Brush chicken with olive oil, season with 1 tsp Smokin' Chipotle, and let rest 15-20 minutes.
- Grill chicken on high heat, 2-3 minutes per side. Let rest, then dice into ¼" pieces.
- Combine chicken, beans, tomatoes, bell pepper, corn, jalapeno, and cilantro in the bowl.
- Toss with remaining Smokin' Chipotle, lime juice, and olive oil. Serve.
Tips
- Keep the jalapeno seeds in if you like extra heat.
