Sauteed Peppers and Onions

Sauteed Peppers and Onions

Slow-sauteed bell peppers and onions with smoky chipotle seasoning — versatile enough for tacos, sandwiches, burgers, or eggs.

Prep: 10 mins | Cook: 25 mins | Servings: 4

Ingredients

  • 2 tsp Smokin' Chipotle (or any blend)
  • 3-4 bell peppers, seeded and sliced ¼" thick
  • 1 large red onion, halved and sliced ¼" thick
  • 4-5 Tbsp olive oil

Directions

  1. Seed and slice peppers lengthwise into ¼" strips. Halve and slice the onion ¼" thick.
  2. Heat olive oil in a large saute pan over medium-high heat.
  3. Add seasoning and let it bloom for 30 seconds.
  4. Add peppers and onions, toss to coat evenly.
  5. Reduce heat to medium-low and saute 20-25 minutes, stirring every 5 minutes.
  6. Remove from heat and serve immediately, or cool and store in a sealed container for up to a week.

Tips

  • Pulse cooled peppers and onions in a food processor with olive oil and lemon for a quick pepper spread.
