Sauteed Green Beans with Onions and Lemon
Bright, buttery green beans with sauteed onions and a squeeze of lemon that makes the herbs pop.
Ingredients
- 1½ tsp Curry in a Hurry or any blend
- 1 lb fresh green beans, trimmed
- 1 small onion, halved and sliced ⅛" thick
- 2 Tbsp unsalted butter
- 2 Tbsp olive oil
- ½ lemon, juiced
Directions
- Bring a large pot of water to a boil. Blanch green beans for 5 minutes, then transfer to an ice bath.
- Slice onion into thin ⅛" slices.
- Add butter, olive oil, and seasoning to a saute pan over medium heat.
- Saute onions for about 5 minutes, then add green beans and lemon juice.
- Remove from heat, cover, and let sit 5-10 minutes before serving.
