Sauteed Green Beans with Onions and Lemon

Bright, buttery green beans with sauteed onions and a squeeze of lemon that makes the herbs pop.

Ingredients

  • 1½ tsp Curry in a Hurry or any blend
  • 1 lb fresh green beans, trimmed
  • 1 small onion, halved and sliced ⅛" thick
  • 2 Tbsp unsalted butter
  • 2 Tbsp olive oil
  • ½ lemon, juiced

Directions

  1. Bring a large pot of water to a boil. Blanch green beans for 5 minutes, then transfer to an ice bath.
  2. Slice onion into thin ⅛" slices.
  3. Add butter, olive oil, and seasoning to a saute pan over medium heat.
  4. Saute onions for about 5 minutes, then add green beans and lemon juice.
  5. Remove from heat, cover, and let sit 5-10 minutes before serving.
