Roasted Red Peppers with Feta

Charred roasted red peppers tossed with crumbled feta, fresh thyme, and a bright lemon-balsamic finish.

Ingredients

  • ½ tsp French Made Easy or any blend
  • 3 red peppers
  • ¼ cup olive oil
  • 1½ tsp fresh thyme
  • ½ cup feta cheese, crumbled
  • ¼ tsp balsamic vinegar
  • ½ lemon, juiced

Directions

  1. Preheat oven to 400 degrees.
  2. Place whole peppers on a baking dish and roast until charred and skin is peeling, about 20-30 minutes, turning every 10 minutes.
  3. Transfer peppers to a bowl, cover with plastic wrap, and let sit 15 minutes to loosen the skin.
  4. Peel skin under running water and remove seeds.
  5. Chop peppers into bite-size pieces.
  6. Toss with olive oil, thyme, feta, balsamic vinegar, lemon juice, and seasoning. Serve.

Tips

  • Strip thyme leaves by grabbing at the tip and sliding your fingers down the stem.
  • Works great with any World Seasonings blend.
