Roasted Red Peppers with Feta
Charred roasted red peppers tossed with crumbled feta, fresh thyme, and a bright lemon-balsamic finish.
Ingredients
- ½ tsp French Made Easy or any blend
- 3 red peppers
- ¼ cup olive oil
- 1½ tsp fresh thyme
- ½ cup feta cheese, crumbled
- ¼ tsp balsamic vinegar
- ½ lemon, juiced
Directions
- Preheat oven to 400 degrees.
- Place whole peppers on a baking dish and roast until charred and skin is peeling, about 20-30 minutes, turning every 10 minutes.
- Transfer peppers to a bowl, cover with plastic wrap, and let sit 15 minutes to loosen the skin.
- Peel skin under running water and remove seeds.
- Chop peppers into bite-size pieces.
- Toss with olive oil, thyme, feta, balsamic vinegar, lemon juice, and seasoning. Serve.
Tips
- Strip thyme leaves by grabbing at the tip and sliding your fingers down the stem.
- Works great with any World Seasonings blend.
