Roasted Mediterranean Chicken with Olives
Tender roasted chicken with olives, capers, and Mediterranean Magic — restaurant-quality flavor made easy at home.
Ingredients
- 2 tsp Mediterranean Magic
- 2 lbs chicken quarters with skin
- ¼ cup olive oil
- 2 tsp red wine vinegar
- 1 red onion, sliced ¼ inch thick
- ⅓ cup Kalamata olives, pitted and halved
- ⅓ cup Spanish stuffed olives, halved
- 2 tbsp capers
Directions
- Preheat oven to 400°F.
- Whisk olive oil, vinegar, and 1 tsp Mediterranean Magic in a large bowl. Add chicken and toss to coat. Let sit 10-15 minutes.
- Place chicken in a 13x9 baking dish and bake at 400°F for 20 minutes until browned.
- Toss onions with remaining 1 tsp Mediterranean Magic.
- Reduce oven to 250°F. Scatter seasoned onions, olives, and capers around the chicken.
- Cover tightly with foil and cook 45 minutes more until internal temp reaches 165°F. Serve with rice, pasta, or quinoa.
