Quinoa Salad with Zucchini
A fresh, light quinoa salad with zucchini, tomatoes, and Mediterranean Magic seasoning.
Ingredients
- 2½ tsp Mediterranean Magic
- 1 cup quinoa, uncooked
- 2 cups water
- 1 medium onion, diced small
- 1½ cups zucchini, diced small
- 2 medium tomatoes, diced
- ⅓ cup parsley, chopped
- 1 lemon, juiced
- 3 tbsp olive oil
Directions
- Toast quinoa with 1 tsp Mediterranean Magic in a pot over medium-high heat until lightly browned.
- Add water, bring to a boil, cover, and reduce heat. Cook about 12 minutes.
- Remove from heat, fluff with a fork, cover, and let sit 10 minutes.
- Dice onion, zucchini, and tomatoes to a uniform small size.
- Combine cooled quinoa with vegetables, parsley, remaining seasoning, olive oil, and lemon juice. Toss and serve.
Tip: This recipe features Mediterranean Magic, but feel free to experiment with any of our 8 seasoning blends for your own twist.
