Quinoa Salad with Zucchini

A fresh, light quinoa salad with zucchini, tomatoes, and Mediterranean Magic seasoning.

Ingredients

  • 2½ tsp Mediterranean Magic
  • 1 cup quinoa, uncooked
  • 2 cups water
  • 1 medium onion, diced small
  • 1½ cups zucchini, diced small
  • 2 medium tomatoes, diced
  • ⅓ cup parsley, chopped
  • 1 lemon, juiced
  • 3 tbsp olive oil

Directions

  1. Toast quinoa with 1 tsp Mediterranean Magic in a pot over medium-high heat until lightly browned.
  2. Add water, bring to a boil, cover, and reduce heat. Cook about 12 minutes.
  3. Remove from heat, fluff with a fork, cover, and let sit 10 minutes.
  4. Dice onion, zucchini, and tomatoes to a uniform small size.
  5. Combine cooled quinoa with vegetables, parsley, remaining seasoning, olive oil, and lemon juice. Toss and serve.
Tip: This recipe features Mediterranean Magic, but feel free to experiment with any of our 8 seasoning blends for your own twist.
