Quinoa Salad with Apples and Ricotta Salata
A wholesome quinoa salad with crisp apples, ricotta salata, and the aromatic depth of Mediterranean Magic.
Ingredients
- 2 tsp Mediterranean Magic
- 1 cup quinoa, uncooked
- 2 cups water
- ½ cup carrots, diced small
- ½ cup cucumber, seeded and diced small
- ½ cup celery, diced small
- ¼ cup red onion, diced small
- ¼ cup flat-leaf parsley, chopped
- ½ cup apple, diced small
- ½ cup ricotta salata (or any firm cheese), diced small
- 4 tbsp hemp oil or olive oil
- 2 tbsp rice wine vinegar
- 1 lemon, juiced
Directions
- Toast quinoa with 2 tsp Mediterranean Magic in a dry pot over medium-high heat for a couple minutes.
- Add 2 cups water, bring to a boil, cover, and reduce heat to medium-low. Cook about 12 minutes.
- Remove from heat, fluff with a fork, cover, and let sit 10 minutes.
- While quinoa cools, dice all vegetables, apple, and cheese to a uniform small size.
- Combine cooled quinoa with all ingredients, oil, vinegar, and lemon juice. Toss and serve.
