Mexican Style Shredded Beef

Bold, smoky shredded beef slow-roasted with Smokin' Chipotle and Mexican in a Minute — ideal for tacos and burritos.

Ingredients

  • 2 tbsp Mexican in a Minute
  • 1 tbsp Smokin' Chipotle
  • 3-4 lbs beef chuck
  • 1 onion, sliced
  • 2-3 cups beef or chicken stock
  • Oil for searing

Directions

  1. Preheat oven to 225°F.
  2. Brush beef with oil, rub with Mexican in a Minute, and let marinate while the pan heats.
  3. Sear beef in a very hot pan for 3-5 minutes per side until a deep crust forms on all sides.
  4. Transfer beef to a roasting pan. Deglaze the sear pan with onions, scraping up browned bits.
  5. Add onions, stock, and Smokin' Chipotle around the beef in the roasting pan.
  6. Cover tightly and roast at 225°F for about 4 hours until fork-tender. Shred with two forks.
