Mediterranean Chickpea Salad

A vibrant chickpea salad with bright herbs, zesty lemon, and aromatic Mediterranean Magic.

Ingredients

  • 3½ tsp Mediterranean Magic
  • 2 (15 oz) cans chickpeas, drained and rinsed
  • 1 cup red bell pepper, finely diced
  • 1 cup yellow bell pepper, finely diced
  • 1 cup green bell pepper, finely diced
  • ⅓ cup Italian flat-leaf parsley, finely chopped
  • 1 medium cucumber, peeled and diced
  • 1 cup tomato, diced
  • 2 green onions, diced
  • ¼ cup olive oil
  • 2½ tbsp rice wine vinegar

Directions

  1. If using dried chickpeas, soak overnight, then simmer with 1½ tsp Mediterranean Magic for 45-50 minutes until tender. Drain.
  2. If using canned, drain and rinse.
  3. Finely dice all vegetables to roughly the same size as the chickpeas.
  4. Combine chickpeas, vegetables, parsley, olive oil, vinegar, and remaining Mediterranean Magic in a large bowl.
  5. Toss well and refrigerate before serving.
