Mediterranean Chickpea Salad
A vibrant chickpea salad with bright herbs, zesty lemon, and aromatic Mediterranean Magic.
Ingredients
- 3½ tsp Mediterranean Magic
- 2 (15 oz) cans chickpeas, drained and rinsed
- 1 cup red bell pepper, finely diced
- 1 cup yellow bell pepper, finely diced
- 1 cup green bell pepper, finely diced
- ⅓ cup Italian flat-leaf parsley, finely chopped
- 1 medium cucumber, peeled and diced
- 1 cup tomato, diced
- 2 green onions, diced
- ¼ cup olive oil
- 2½ tbsp rice wine vinegar
Directions
- If using dried chickpeas, soak overnight, then simmer with 1½ tsp Mediterranean Magic for 45-50 minutes until tender. Drain.
- If using canned, drain and rinse.
- Finely dice all vegetables to roughly the same size as the chickpeas.
- Combine chickpeas, vegetables, parsley, olive oil, vinegar, and remaining Mediterranean Magic in a large bowl.
- Toss well and refrigerate before serving.
