Italian Style Potato Salad
A mayo-free Italian potato salad with olives, capers, fresh herbs, and a bright olive oil-lemon dressing.
Ingredients
- 2-3 tsp Italiano Pronto
- 1½ lb small red potatoes
- 2 cups cherry tomatoes, halved
- 1 cup Kalamata olives, seeded and roughly chopped
- 1 Tbsp fresh thyme
- ½ cup flat-leaf parsley, chopped
- 3 scallions, diced
- ¼ cup fennel, thinly sliced and chopped
- 1-2 Tbsp capers, drained
- 3+ Tbsp olive oil
- Zest of 1 lemon
- ½ cup freshly grated Parmesan cheese
Directions
- Halve potatoes and place in a pot. Cover with cold water and add 1½ tsp Italiano Pronto.
- Bring to a boil and cook until fork-tender. Drain and let cool.
- Halve tomatoes, chop olives, dice scallions, chop parsley and thyme, and thinly slice fennel.
- Combine everything in a large bowl with olive oil, lemon zest, capers, Parmesan, and remaining seasoning. Toss well.
Tip: This recipe features Italiano Pronto, but feel free to experiment with any of our 8 seasoning blends for your own twist.
