Hoppin John Black Eyed Peas
A smoky, hearty Hoppin' John with black-eyed peas, ham hocks, and Smokin' Chipotle over brown rice.
Ingredients
- 5 tsp Smokin' Chipotle
- 2 small smoked ham hocks
- 1 lb black-eyed peas
- 2 medium yellow onions (1 halved, 1 diced small)
- 4 cloves garlic
- 1 bay leaf
- 1 red bell pepper, diced
- ½ green bell pepper, diced
- 3 stalks celery, diced small
- 1 jalapeno, seeded and diced
- 4 green onions, diced
- 2 cups brown rice, uncooked
- 8 cups water (6 for peas, 2 for rice)
Directions
- Sort and rinse peas. Add peas, ham hocks, bay leaf, halved onion, garlic, 1 Tbsp Smokin' Chipotle, and 6 cups water to a large pot.
- Bring to a boil, then cover and simmer 1-1.5 hours until peas are tender but not mushy.
- While peas cook, prepare rice according to package directions with 1 tsp seasoning in the water.
- Dice celery, bell peppers, jalapeno, and remaining onion into pea-sized pieces.
- Remove ham hocks and bay leaf. Stir in diced vegetables, green onions, and remaining seasoning.
- Simmer 10 more minutes. Serve over rice.
Tips
- Substitute pork stock for water for even deeper flavor.
