Hoppin John Black Eyed Peas

A smoky, hearty Hoppin' John with black-eyed peas, ham hocks, and Smokin' Chipotle over brown rice.

Ingredients

  • 5 tsp Smokin' Chipotle
  • 2 small smoked ham hocks
  • 1 lb black-eyed peas
  • 2 medium yellow onions (1 halved, 1 diced small)
  • 4 cloves garlic
  • 1 bay leaf
  • 1 red bell pepper, diced
  • ½ green bell pepper, diced
  • 3 stalks celery, diced small
  • 1 jalapeno, seeded and diced
  • 4 green onions, diced
  • 2 cups brown rice, uncooked
  • 8 cups water (6 for peas, 2 for rice)

Directions

  1. Sort and rinse peas. Add peas, ham hocks, bay leaf, halved onion, garlic, 1 Tbsp Smokin' Chipotle, and 6 cups water to a large pot.
  2. Bring to a boil, then cover and simmer 1-1.5 hours until peas are tender but not mushy.
  3. While peas cook, prepare rice according to package directions with 1 tsp seasoning in the water.
  4. Dice celery, bell peppers, jalapeno, and remaining onion into pea-sized pieces.
  5. Remove ham hocks and bay leaf. Stir in diced vegetables, green onions, and remaining seasoning.
  6. Simmer 10 more minutes. Serve over rice.

Tips

  • Substitute pork stock for water for even deeper flavor.
