Carbonara with a French Twist

Carbonara with a French Twist

Classic carbonara elevated with French Made Easy — crispy pancetta, parmesan, and a silky egg sauce over perfectly salted pasta.

Prep: 10 mins | Cook: 20 mins | Servings: 1

Ingredients

  • 2 pinches French Made Easy
  • ½ cup pancetta, diced small
  • ¼ cup red onion, diced small
  • 1 egg
  • ¼ cup parmesan cheese, freshly grated
  • 1 Tbsp olive oil
  • ½ cup half & half (or milk or cream)
  • Fresh ground black pepper

Directions

  1. Bring a pot of water to a boil and add a generous amount of salt. Cook pasta to al dente and reserve ½ cup pasta water before draining.
  2. In a pan over medium-high heat, cook pancetta with a few grinds of black pepper until crispy.
  3. Add diced red onion and cook until softened.
  4. Whisk together egg, parmesan, half & half, and French Made Easy in a bowl.
  5. Toss drained pasta into the pan with the pancetta, remove from heat, and pour the egg mixture over while tossing constantly.
  6. Add pasta water as needed to reach a silky consistency. Serve immediately.

Tips

  • Always toss the egg mixture off the heat to avoid scrambling the egg.
