Black Bean Salad

A fresh, zesty black bean salad with crunchy vegetables and Mexican in a Minute — perfect as a side or a light meal on its own.

Ingredients

  • 1½ tsp Mexican in a Minute
  • 3 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • 16 oz can black beans
  • ¼ cup green onions, diced
  • ¼ cup celery, diced
  • ¼ cup green bell pepper, diced
  • ½ cup cucumber, peeled and diced
  • 1 jalapeño, seeded and diced
  • 1 large tomato, diced small
  • 5 stuffed green olives, diced
  • Smoked olive oil for finishing (optional)

Directions

  1. Rinse beans under cold water and drain well.
  2. Combine all ingredients in a bowl and mix well.
  3. Chill for an hour or more for best flavor, or serve immediately.
  4. Drizzle with smoked olive oil before serving if desired.

Tips
