Black Bean Salad
A fresh, zesty black bean salad with crunchy vegetables and Mexican in a Minute — perfect as a side or a light meal on its own.
Ingredients
- 1½ tsp Mexican in a Minute
- 3 Tbsp olive oil
- 1 Tbsp red wine vinegar
- 16 oz can black beans
- ¼ cup green onions, diced
- ¼ cup celery, diced
- ¼ cup green bell pepper, diced
- ½ cup cucumber, peeled and diced
- 1 jalapeño, seeded and diced
- 1 large tomato, diced small
- 5 stuffed green olives, diced
- Smoked olive oil for finishing (optional)
Directions
- Rinse beans under cold water and drain well.
- Combine all ingredients in a bowl and mix well.
- Chill for an hour or more for best flavor, or serve immediately.
- Drizzle with smoked olive oil before serving if desired.
