Beer Can Smoked Chicken
Low-and-slow smoked chicken with a bold chipotle-and-Mexican seasoning rub, propped on a beer can for juicy, smoky perfection.
Ingredients
- 1½ Tbsp Smokin' Chipotle
- 1½ Tbsp Mexican in a Minute
- 1 roasting chicken
- ½ stick butter, melted
- 1 beer can or bottle
- 1 bag mesquite smoking chips, soaked per instructions
Directions
- Get your smoker to 225-235°F and keep charcoal ready to maintain heat for about 2½ hours.
- Remove gizzards from the chicken cavity, then brush melted butter all over the bird.
- Loosen the breast skin and pour remaining butter between the skin and meat.
- Mix both seasoning blends together and sprinkle generously all over the chicken, including under the drumsticks and wings.
- Let the chicken sit at room temperature for 15-20 minutes.
- Place an empty beer bottle inside the chicken cavity and set upright on the smoker.
- Smoke for about 2½ hours, adding charcoal as needed, until internal temperature reaches 165°F.
Tips
- Use an internal meat thermometer to ensure the chicken is fully cooked.
