Ingredients

  • 1½ Tbsp Smokin' Chipotle
  • 1½ Tbsp Mexican in a Minute
  • 1 roasting chicken
  • ½ stick butter, melted
  • 1 beer can or bottle
  • 1 bag mesquite smoking chips, soaked per instructions

Directions

  5. Let the chicken sit at room temperature for 15-20 minutes.
  6. Place an empty beer bottle inside the chicken cavity and set upright on the smoker.
  7. Smoke for about 2½ hours, adding charcoal as needed, until internal temperature reaches 165°F.
