Mediterranean Black Eyed Pea Salad

A cold, refreshing black-eyed pea salad with Mediterranean Magic — great for BBQs, picnics, and potlucks.

Ingredients

  • 2 tbsp Mediterranean Magic
  • 1 bag dried black-eyed peas
  • 1 orange bell pepper, diced
  • 4 green onions, diced
  • 1 jalapeno, seeded and diced
  • 1 cucumber, seeded and diced small
  • 6 tbsp olive oil
  • 3 tbsp red wine vinegar
  • 1 lemon, juiced

Directions

  1. Soak dried peas overnight in plenty of water, then drain.
  2. Add peas to a saucepan, cover with water, and stir in 1 tbsp Mediterranean Magic.
  3. Bring to a boil, reduce to medium, and cook until tender but not mushy.
  4. Drain peas and let cool.
  5. Dice bell pepper, green onions, jalapeno, and cucumber.
  6. Toss cooled peas with vegetables, remaining Mediterranean Magic, olive oil, vinegar, and lemon juice.
  7. Chill before serving.
Tip: This recipe features Mediterranean Magic, but feel free to experiment with any of our 8 seasoning blends for your own twist.
