Mediterranean Black Eyed Pea Salad
A cold, refreshing black-eyed pea salad with Mediterranean Magic — great for BBQs, picnics, and potlucks.
Ingredients
- 2 tbsp Mediterranean Magic
- 1 bag dried black-eyed peas
- 1 orange bell pepper, diced
- 4 green onions, diced
- 1 jalapeno, seeded and diced
- 1 cucumber, seeded and diced small
- 6 tbsp olive oil
- 3 tbsp red wine vinegar
- 1 lemon, juiced
Directions
- Soak dried peas overnight in plenty of water, then drain.
- Add peas to a saucepan, cover with water, and stir in 1 tbsp Mediterranean Magic.
- Bring to a boil, reduce to medium, and cook until tender but not mushy.
- Drain peas and let cool.
- Dice bell pepper, green onions, jalapeno, and cucumber.
- Toss cooled peas with vegetables, remaining Mediterranean Magic, olive oil, vinegar, and lemon juice.
- Chill before serving.
Tip: This recipe features Mediterranean Magic, but feel free to experiment with any of our 8 seasoning blends for your own twist.
